I will be the first one to tell you that I am not a big fan of seafood. Sure, I love popcorn shrimp & shrimp cocktail but that's about it. I really want to start eating more fish in my diet. If anyone has any really good recipes let's hear it! Here is one form the Jan newsletter:

Shrimp Fajitas

INGREDIENTS
1 lb. bay shrimp
1 large green bell pepper, sliced into strips
1 large red bell pepper, sliced into strips
1 large Spanish onion, sliced into strips
1 tbsp. minced garlic
¼ cup virgin olive oil
Cilantro
Salt and Pepper
Flour tortillas
Avocado and salsa for garnish
DIRECTIONS
Sauté peppers, onions and garlic in the olive oil. Cook the mixture until tender; add cilantro, shrimp, salt, and pepper. Simmer for 5 minutes. Serve with warm flour tortillas. Garnish with avocado and salsa.
